Need help please very badly not sure if this is a warning sign?

been with my man for over 3 years we got engaged last year but there are times when I am unsure of him because of the following things. He is very romantic, has no issues with PDA and expresses himself very well BUT! yes BUT! today for example we worked on installing an AC and mind you he is a guy and has worked with electricity often as well as he is stronger then me. We lifted this heavy AC in and out f the vehicle then on top the travel trailer we installed it into, but no matter how hard I would try he got angry and anoid with every small thing that was not perfect, down to the way I handed him a screwdriver. After all afternoon of that i had it and when he said something else I told him that he was acting rude and it was uncalled for, which ended in HIM TELLING ME that it is because of the way I am talking to him.....ARE YOU KIDDING ME?????? he acts like an *** ALL DAY then he has the nerve to get upset at me for telling him he is a !!!! so next he was acting like a for the next few hours....then all of a sudden he gets nice again and acts like nothing happened. THIS is getting old. Its like a roller coater ride with him, all is well when I do not talk back or question him but as soon as it is not his way **** hits the fan......please help me make light of this.....so as he just went to bed he tells me "babe your the love of my life and everything I ever wanted, I am so in love with you"......is this a joke? really you treat the love of your life like that as well???????? not only that but one day he tells me I am to clingy and the next he says he cannot ever be without me, jesus can anyone help me please
